Bruschetta...Italian Tuscany

All Italians know what bruschetta is... however original bruschetta is composed of olive oil, garlic, salt, pepper spread over toasted thinly sliced italian white bread. Over the years, people have changed and added specific ingredients to personalize their own bruschetta... and this is mine. Many people spend a lot of money on premixed oil topping for their bruschetta, I make mine homemade. I love serving this as an appetizer for when I have guests over while I finish cooking the main course meal. It's easy, quick and delicious.

Ingredients:
12-18 thinly sliced Italian or French bread (I buy it pre-sliced at Walmart for $2.00 a loaf)
2 beefsteak tomatoes
1 1/2 cups shredded mozzarella cheese
1/2 cup olive oil
1 tbl italian seasonings
1 tbl basil

Prep:
~ On a baking sheet, spread slices over a piece of tin foil
~ Turn the broiler on the oven
~ Lightly toast one side of the bread (be sure it does not burn, watch it closely, it only takes 2 mins or so)
~ Remove and flip over bread and repeat toasting on bottom side and then remove when toasted
~ Then in a bowl add oil and seasonings and mix
~ Gut tomatoes and dice the "meat" part of the tomato into small pieces
~ Using a pastry brush mix bowl again and spread mixture onto top side of bread
~ Add tomatoes to top, spreading evenly among the slices of bread, it may only be a few pieces per slice and that is fine
~ Sprinkle cheese over top of tomatoes, so when it melts it holds the tomatoes down
~ Return to oven under broiler
~ Again watch closely so bread/cheese does not burn. Cook till cheese is melted and slightly browned.
~ Serve hot
