Three Cheese Manicotti

Three cheese manicotti is very good and pretty simple to make in my book... I recommend this dish to anyone who has made "Dee's Red Sauce" because that is more complicated to make if you don't have it made prior to this dish. For this recipe I had some of my sauce in the freezer and just thawed it out the night before making this... unless you have your own spaghetti sauce recipe you'd prefer.. it'll work with any sauce, but I just prefer it with mine!!

Ingredients:
1 ½ pounds tubed Italian sausage
1 ½ pounds ricotta
1 lb. mozzarella
½ lb. parmesan cheese
1 tbl garlic powder
2 boxes manicotti noodles
Parsley
Shredded parmesan

Prep:
~Preheat oven to 350 degrees
~Brown sausage in skillet, drain grease
~Mix all cheeses and garlic powder in bowl
~Then add sauce to cheese mixture when done cooking and drained
~I prefer to use my hands to mix and knead all this together, it's SO much easier than using a spatula or spoon
~Spread a small layer of sauce on bottom of pan
~Stuff uncooked shells with cheese, sausage mixture, layer in pan
~Cover in pan with sauce
~Serve with sprinkled shredded parmesan cheese and sprinkle with parsley for flavor
~Cook in oven for 45-60 minutes
~Serve with

Brown the sausage and break it up into the smallest pieces you can, then drain the grease
Then add the sausage to the cheese mixture, and it is best using your hands, and knead it like dough until mixed very thoroughly.
Put a layer of "Dee's Red Sauce" in the bottom of a baking pan
Stuff manicotti shells with mixture
Then smother with "Dee's Red Sauce", bake at 350 degrees for one hour

Shown here served sprinkled with shredded parmesan and a few pinches of parsley

  1. I made this for my family last night and we all absolutely LOVE it, including the kids who are normally picky eaters. I added a table spoon of onion powder and only used about a lb of ricotta. This dish was SO easy to make and simply delicious, thanks so much!
