Veggie Pasta

This is the first time I've made this recipe and I really can't get over how easy it was and what a great meal it ended up being, even with no meat!! And I usually don't make meals without any meat in it... so this was a first! For all the vegetarians out there.. this is a great choice! Even my husband liked it!!

Ingredients: (2 servings)
1/2 lb. penne or angel hair pasta (mine is shown with penne pasta)
1 medium squash
1 medium zucchini

2 tbl olive oil
2 cups cherry tomatoes
¾ cup heavy whipping cream
½ tsp dried dill
¼ tsp salt
1/8 tsp pepper
4 oz crumbled goat cheese

Prep:
~Grate squash and zucchini
~Sautee in olive oil in a skillet
~Cook pasta
~Cut tomatoes in half
~Add cream, dill, salt and pepper to zucchini/squash and cook for three minutes
~Add tomatoes, and cook for another 3 minutes, remove from heat
~Put pasta on plate, put veggie mix on top of pasta, and top with crumbled cheese


Voila!!!
