Oven Fried Chops & Crunchy Cole Slaw

Well I am back in Colorado at home with my husband and son! My 3 month old son Dominic and I were visiting my family and friends back in Michigan for the whole month of February because my husband Jesse had training with the Army down in Fort Polk, Louisiana. Needless to say as you can tell by my posts, I didn't cook very much while in Michigan, but did manage to put a few posts up for my blog entry hungry friends :) So my first homemade meal being back home was oven fried pork chops and crunch cole slaw... YUMMY! This dish was easy to make! You could obviously serve your pork chops with whatever you'd like, but this post is going to come with both recipes!! Whoo hoo!! My mom always makes this cole slaw for a dish to pass at a picnic or when you have a bunch of people over in the summer time. It's quick, easy, cheap and delicious. Many people don't like cole slaw because of it's mayo taste, this one is made with a homemade olive oil based dressing... So let's get started!!

Ingredients for Chops:
2 Pork chops (with or without bone, mine had bone in them..)
1 egg
1 bag of bread crumbs (for pork, about $1.50 at Walmart)
1/4 tsp pepper

Prep:
~ After thawing out pork chops, preheat oven to 350 degrees
~ Beat egg in bowl
~ Cover pork chop in egg on both sides
~ Put 1/2 bread crumbs and pepper in a bag (zip-lock or mixing back that comes with bread crumbs)
~ Put pork chop in bag and work bread crumbs to cover chop completely
~ Using a fork, remove chop and put it on baking sheet (sprayed with non stick spray or with tin foil, sprayed as well)
~ Repeat for second chop adding second half of mixture into bag
~ When oven is preheated put pork chops in on middle rack
~ Cook from 30-45 mins depending on thickness and size of chop
~ Make sure it is completely cooked all the way through, but be careful to not overcook and take out the moisture

These taste like they have been fried... but they haven't.... hence the name I have allotted this timeless recipe LOL

3 tbl. white vinegar
Package of chicken seasoning from ramen
1 tbl. sugar
1/2 tsp salt

~ Break up noodles and then mix with slaw
~ In a bottle that you can shake well, add oil and vinegar.

** DO NOT ADD DRESSING TO SLAW UNTIL JUST BEFORE YOU SERVE... OTHERWISE IT BECOMES TOO SOGGY**
