Papa Bocci's Waffles!!!!

Who doesn't love waffles?!? And for all the people who have loved my Papa's waffles,and who have had the opportunity to eat them over the years... here it is!! First of all.. you of course need a waffle iron!! I have a Cuisinart waffle make from Macy's. This is an easy, quick recipe to make. I usually make my batter the night before and store it in the fridge covered with ceran wrap and making sure I keep the egg whites separate till the next morning before I make it.

Ingredients:
1 3/4 cups flour
3 tbl baking powder
2 beaten egg yolks (reserve egg whites)
1 3/4 cups milk
1/2 cup canola oil or vegetable oil

Prep:
~Heat waffle iron
~Mix all ingredients together, separating egg yolks and whites, set whites to the side
~Beat egg whites till fluffy, DO NOT ADD TO MIX UNTIL JUST BEFORE YOU ARE READY TO MAKE WAFFLES
~Depending on size of iron, put anywhere for 1/4-1/2 cup of batter in center of iron, and close lid following cooking instructions for your specific iron.
~Put toppings on as desired: fruits, whipped cream, powdered sugar, syrup, etc.


Separate yolk from whites
Add ingredients mixed well 
Be sure to beat whites good, put to side or all in fridge until ready to cook
Your batter will be smoother once you add the whites...
Cook waffle and put desired toppings.. shown with syrup and powdered sugar (Jesse's favorite)
