Herb-Crusted Pork Tenderloin.... YUMMY!!

I am very picky about cooking pork because it can dry out so fast... I decided to make pork tenderloin and gave this way of cooking it a shot.. and it was a KNOCKOUT success. The meat was so tender and juicy, and Jesse just devoured it up. For those of you who have been asking for another good pork recipe... this one rocks!





Ingredients:
2 pork tenderloins (about 3/4 lb each)
1 cup Italian bread crumbs
1/4 cup parsley
2 tbl garlic salt
1 tsp pepper
1 tbl oregano
1 tbl olive oil
Piece of aluminum foil

Prep:
~Preheat oven to 450 degrees
~Spray shallow roasting pan with non-stick spray
~In bowl mix bread crumbs and spices, spread out on plate
~Roll both tenderloins in mixture
~Place in pan, loosely covering with foil
~Cook pork for 20 minutes, then remove foil
~Then bake for another 15 minutes
~Remove, cover with foil again, let stand for 10 minutes, using a cooking thermometer, inserting in thickest part, make sure the meat is at 160 degrees F
~Serve with any dish you choose!!


Roll in mixture and place in pan
Cook loosely with foil covering
Remove foil, cook, and then cover again and let stand for 10 minutes
This is the rice that is in the picture below... I love these. They are simple and tasty!
